I am an applied food biopolymers researcher focused on converting agri-food side streams into high-value, clean-label ingredients and materials. I isolate and tailor polysaccharides/pectins, proteins, and phenolics from various food waste and agricultural resources using conventional, ultrasound, and microwave extraction methods. I link structure to function using a various physicochemical technique (FTIR, SEM, XRD, NMR, DSC, TGA, etc), as well as texture and composition analyses to deliver natural emulsifiers, plant-based products, active/biodegradable films, and encapsulation systems. Through the envisaged applications, my research not only provides novel products with improved characteristics that may have a positive impact on human health but also contributes to a social and environmental positive impact by promoting sustained, inclusive, and sustainable economic growth.
