PepsiCo's product portfolio includes a wide range of enjoyable foods and beverages, including many iconic brands that generate more than $1 billion each in estimated annual retail sales.
Challenge
Based on literature information, gallic acid seems to have antimicrobial effects specifically on gram negative microorganisms. The PepsiCo R&D team is interested in understanding the performance of gallic acid in high acid beverage formulations as a preservative. Specifically, gallic acid from natural sources (plants, fruits, grains, nuts etc.) are of interest.

- Consumer friendly name, ideally botanical in nature and has potential to be labelled as an extract or a non-chemical name.
- Solubility in pH < 4.0 at efficacious doses
- Effective to microorganisms at pH 3.0 – 4.0.
