Background
The great challenge for powdered beverages process is to deliver a homogeneous product and guarantee quality criteria, since their composition is a heterogeneous mixture made up of powders of different densities, shapes and particle sizes, which, associated with high-speed lines, lead to segregation and a consequent impact on quality.
Given the trend towards reformulation, especially hybridization with a reduction in the amount of sugar, formulas have become thinner and more susceptible to the effects of segregation, causing fine powder to be released during the filling stage, unbalancing the formula and generating process losses.
Challenge
The aim of this initiative is to reduce the current segregation intrinsic to the process and eliminate the generation of fine powder that occurs at the end of the line, during product filling.
The path, not only limited to this, involves working on the size, shape and/or density of the particles of the critical ingredients that are associated with the problem of segregation and dispersion of fine powder at the end of the line.
The key success criteria is to reduce segregation and eliminate powder losses in the filling step, maintaining product integrity for quality standards and legislations.
