Background
The great challenge for powdered beverages process is to deliver a homogeneous product and guarantee quality criteria, since their composition is a heterogeneous mixture made up of powders of different densities, shapes and particle sizes, which, associated with high-speed lines, lead to segregation and a consequent impact on quality.
Given the trend towards reformulation, especially hybridization with a reduction in the amount of sugar, formulas have become thinner and more susceptible to the effects of segregation, causing fine powder to be released during the filling stage, unbalancing the formula and generating process losses.
Challenge
The goal of this initiative is to address challenges related to powder segregation and eliminate fine powder dispersion in the filling process.
Specifically, the focus is to explore agglomeration process during mixing as a potential solution, focus on dry agglomeration using dry binding agents for powdered beverages, but open to exploring other agglomeration methods (liquid, oil, etc.).”
