Citri-Fi® citrus fiber is produced from byproduct of the citrus juicing industry. The process, which is free from chemical modifications, opens up the fiber to high surface area which lends itself to high water holding and emulsification properties. Not all citrus fibers are created equal. Citri-Fi is one of the highest functional citrus fibers on the market which equates to lower usage levels. Due to its high level of functionality, it can clean up food labeling by replacing starches and/or food gums. When used in baked goods at usage levels (0.2% - 1.0%), this citrus fiber binds available water including water released from the flour’s starch and gluten to help reduce staling and to improve the perception of freshness over time. Due to Citri-Fi’s functionality, this natural ingredient can also reduce oil and/or egg content. In powdered beverages, Citri-Fi creates a more natural mouthfeel and contributes some dietary fiber to help improve the nutritional profile. The Citri-Fi portfolio includes the 100, 200, 300 and the new organic 400 series. The 100 series is a standard citrus fiber while the 400 is USDA certified organic. The 200 and 300 series are citrus fibers co-processed with guar gum or xanthan gum, respectively, to provide additional viscosity. The portfolio comes in various particles sizes to target specific textures. This natural citrus fiber is non-GMO Project certified, allergen-free and gluten-free. Citri-Fi also has no E-number which benefits regions like Europe. Labeling options include citrus fiber, dried citrus pulp or citrus flour.
