Summary Currently, the market for dietary fibers is large, with applications for weight loss, gut health, and blood glucose control. With the rapid rise in multibillion dollar global demand for fiber, a growing drive exists to identify new, better functioning sources of fiber. Carrot pomace has the potential to be at the top of this list. Although carrot pomace is currently considered a “waste product” of carrot juice production, it is rich in soluble and insoluble fibers. The Nile rat is a novel model for Type 2 Diabetes and Metabolic Syndrome that, like humans, responds favorably to increased fiber consumption and low glycemic load diets. Using the Nile rat model, this invention is used as a fiber substitute for other commercial fibers (nonfermentable cellulose and soluble inulin, the current gold standard of healthful fibers), showing that our proprietary carrot pomace powder is the only fiber that completely prevents diabetes.
