By extruding pea starch combined with dried vegetables puffed ‘pops’ are created with an airy structure and a light vegetable taste and color - a base for coating, binder and crumb

About

The “no-fry” Vega coatings have been nominated for various innovation awards, including the “Ketchum Food Innovation Award 2015”. After great interest from industry and fast food, production had to be scaled up at the time, which unfortunately was not technically feasible at the time. The products are now produced by a company that specializes in extrusion technology and are available for industrial use.

Key Benefits

VEGA-Crumbs contain vacuoles within a robust network of extruded pea starch and dried vegetables. The nutrients from the vegetables ensure that less oil is absorbed compared to breadcrumbs during (pre) frying. It is even possible to get a crispy crust without it being fried! This unique ‘no-fry’ coating contains no oil after preparation and remains crispy for a long time. The end products with these crumbs are therefore extremely suitable for preparation in especially the airfryer and oven. They contain their natural colour, around 11% fibre and no added sugars, salt and wheat (possibly traces of gluten).

Applications

Coatings (no-fry), binding in numourous food applications or used as an airy component in granolas, a muesli bar or chocolate block.
